Once again a miserable weekend stuck indoors. At least we were fortunate not to get hit by the storm, unlike people up north. It is a mission sometimes to find a variety of indoor activities to entertain a two year old. Today I thought we would make pancakes for lunch. Charlie was very excited. I put all the measured ingredients into separate bowls and jugs, Charlie put them all together and mixed them all up. We used the pancake recipe from the Kiwi icon, Edmonds Cookbook. If you are unfortunate not to have a copy (most New Zealand kitchens own one) here is the recipe,
1 cup standard plain flour 3/4 cup milk
1/8 teaspoon salt water
1 egg
Sift flour and salt into a bowl. Add egg, mixing to combine. gradually beat in milk, mixing to a smooth batter, Chill for 1 hour. Stir. The batter will thicken on standing. Add a little water if necessary to bring it back to the original consistency.
Charlie's choice of topping is three berry jam
Mine is fresh lemon juice and a sprinkle of sugar.
